Recipe: Green Onion Aioli


I am amazed at what can be done with mayo.  I've used plain mayo as a simple seasoning to moisten and baste chicken before barbecuing, as well as thinly dressing salmon before baking.  It has been the perfect simple condiment to many other dishes.

But today I was in a daring mood, and instead of plain mayo on my steak sandwich, I made this simple green onion aioli.

It made my fiance C, his sandwich, and his tummy very happy.

Green Onion Aioli

Ingredients
1 clove garlic
1 teaspoon tabasco sauce or dry jalapeno chile
1 teaspoon rice vinegar
1/4 cup chopped green onion, sliced very thin
salt
white pepper

Homemade Version
Add 1 egg yolk and 1 cup Olive Oil to list of ingredients
Combine all ingredients except oil, salt and pepper in a food processor or mini prep and process until finely minced.  Gradually add the olive oil and process until mixture thickens.  Add salt and pepper to taste.

Shortcut Version
Add 3/4 cup of mayonaise to list of ingredients
Combine all ingredients except salt and pepper in a mini food prep or food processor and process until fully combined.  Add salt and pepper to taste.
