Lazy Sunday Cake and Simple Vanilla Frosting

Funny thing about weekends is that they come around too quickly.  Mine are always filled with chores around the house, catching up on sleep, or organizing piles of junk that tend to appear from nowhere.  

This weekend was much more interesting than the usual.  Spent lots of time with C's family celebrating a birthday and family traditions.  I ate, and ate some more, cooked and ate again.  Heard gossip and swore to tell no one, which I plan on keeping. Secrets are secrets because they're meant to be kept.  At least for the most part.

I had a little helper in the kitchen today bake me a cake.  We cheated by using a boxed cake mix - a quick and dirty way to have cake without all the hard work and extra effort.  After all, that's what lazy Sunday are all about. 

I really didn't care that the frosting wasn't perfect either.  It got the job done and I got to enjoy the rest of my day.

Vanilla Frosting
Recipe adapted from Baked Explorations

Makes about 2 cups, enough for one 8-inch cake

1 Cup (2 sticks) unsalted butter, room temperature
2 Cups confectioners sugar
2 Tablespoons vanilla extract

Using a hand mixer or stand mixer, beat butter until creamy.  Add the sugar and vanilla extract and continue beating until mixture is blended.
